These chardonnay grapes are from the Lahoma vineyard located in Rock Stream NY. The grapes were hand picked, destemmed then cold soaked with the skins for 24 hours in a refrigerator before pressing.

After the juice was pressed it was racked off of the heavy pressing lees and fermented at an average temperature of 60 F using ICV-D47 yeast. Post fermentation the wine was kept on a portion of the heavy and soft lees for the 6 month duration that it aged in stainless steel where it also completed malolactic fermentation. After that it was filtered and bottled.

My goal for this wine was to try and create a stainless chardonnay with some substantial presence in the glass. Stainless chardonnay is one of my favorite wines to drink but it can be a little bashful in my experience so all of my winemaking decisions were based on giving these grapes the most opportunity possible to show their personality.
